Grilled Fajita Burger

Want the experience of that sizzling hot plate walking through the restaurant, and getting set down right in front of you... without having to go to the restaurant, or have all that "sizzle" all over your own floor and table? Then try this yummy Grilled Fajita Burger! It has the tastes of a delicious fajita experience without the mess. You can prep these ahead of time, serve with a fresh salad, brown rice (or crispy corn tortillas!) and side of grilled veggies for a tasty dinner at home, without even heating up your oven. 


Serves 4

 

Ingredients

1 1/2 lbs Extra Lean Ground Beef

2 TBS Taco Seasoning

1/2 Yellow Onion (small, finely chopped)

1/2 Jalapeno Pepper (medium, finely chopped (up to 1 whole))


2 Garlic (clove, minced)

2 Orange Bell Pepper (stem and seeds removed, quartered)

1 tsp Avocado Oil

8 leaves Romaine (up to 10 leaves)

2 Avocado (small, mashed)

Instructions

Preheat your grill to medium heat for at least 10 minutes.

In a mixing bowl combine the beef, taco seasoning, onion, jalapeno, and garlic. Mix until well combined. Form the meat into tightly packed patties, about 5 inches in diameter.

Rub the peppers with the oil.

Grill the burger patties and peppers for four to seven minutes per side or until the burgers are cooked through to your liking and peppers are tender.

To serve, use a few leaves of lettuce as a bun and top burgers with mashed avocado and grilled peppers. Enjoy!

Serve alongside additional grilled veggies, crunchy tortilla chips, or a fresh salad. 


To Prep Ahead:

Make the burger patties, and store tightly wrapped in the refrigerator up to 2 days. Cut and seed orange peppers and store in a glass container or reusable zip-top bag

Wash and pat romaine leaves dry, wrap in a damp cloth or paper towel and store in a reusable zip-top bag. 

Optional Substitutions:

Use ground turkey or ground chicken instead, be sure to fully cook any ground poultry to 165 degrees Fahrenheit internal temperature.

If you don't have romaine, use Boston lettuce, butter lettuce, cabbage leaves, or serve the burger over a chopped salad.
