
Air Fryer Dijon Herb Salmon

Bright and fresh! Herbs and dijon mustard give this salmon dish lots of flavor while still being simple to prepare, and without heating up the whole kitchen. Pop it in the air-fryer, and enjoy this high protein, low carb dish any day of the week. This recipe includes essential Omega-3 Fatty Acids that promote heart health and reduce inflammation, is a good source of Vitamin D and calcium thanks to both the salmon and the arugula, and also contains Vitamin C, important for immune health!

Ingredients
16 oz Salmon Fillet
4 tsp Extra Virgin Olive Oil (divided)
Sea Salt & Black Pepper (to taste)
3 tbsp Mayonnaise
1 1/2 tsp Dijon Mustard 2 tsp Lemon Juice 1 tbsp Fresh Parsley (finely chopped) 1 tbsp Fresh Chives (finely chopped) 1 tbsp Fresh Dill (finely chopped) 4 cups Arugula 1 Large Cucumber (sliced) |

Instructions
Preheat the air fryer to 400ºF.
Chop the fresh herbs all together, and divide into two separate small bowls.
In the first bowl, add 2 tsp olive oil to the herb mixture. Rub the salmon with oil mixture and season with salt and pepper.
Place the salmon in the air fryer and cook for seven to nine minutes or until flaky and cooked through to your liking. The timing will depend on the thickness of your fillet(s).
Meanwhile, in a the second small bowl, mix together the remaining oil, and herbs with the mayonnaise, mustard, and lemon juice.
Divide the salmon between plates when finished cooking. Add the arugula and cucumber alongside the salmon. Drizzle about half of the dressing onto the salad and use the remaining to serve alongside the salmon for dipping. Enjoy!
Store leftovers in the refrigerator in an airtight container for up to 3 days.
To prep ahead, chop herbs and store in small airtight bowls for up to 3 days
NOTES:
If you do not have fresh herbs, use 1-2 tsp of dried herbs, the flavor will be similar, but dried herbs have a slightly more intense flavor so do not need to be used 1:1.
Arugula can be substituted with any other leafy green - baby kale, baby romaine, or even a bag of mixed salad greens.
