Cranberry Apple Oat Crisp
Enjoy this classic crumble with the added sweet tart from heart healthy cranberries. This recipe is high in antioxidants and dietary fiber, thanks to ingredients like apples, oats, and cranberries. Dietary fiber aids in improving digestion, and antioxidants help prevent cellular damage. Cranberries are considered a "bitter food" which has many health benefits!

Ingredients
1/3 cup Coconut Oil (or butter) 3 Apples (large, cored, chopped) 2 cups Frozen Cranberries 1/2 cup Real Maple Syrup 3/4 cup All Purpose Gluten-Free Flour (divided) 1/8 tsp sea salt 1 tsp cinnamon 1/4 tsp nutmeg 1 1/2 cups Gluten-Free Oats 1/4 cup Coconut Sugar |

Instructions
- Preheat the oven to 350°F.
- Use a little bit of coconut oil to grease an 11x7 inch baking dish.
- Add the apples, cranberries, pure maple syrup and 1/4 cup of the gluten free flour to the baking dish. Gently toss until well combined.
- In a bowl, stir together the remaining flour, gluten free oats, cinnamon, nutmeg, sea salt and coconut sugar. Add the remaining coconut oil and use your hands or two forks to combine until the mixture is crumbly.
- Sprinkle the oat mixture evenly over the fruits and press gently. Bake for 40 to 50 minutes, or until golden brown and the fruits have softened. Let cool and enjoy!
- Serve topped with whipped coconut cream, whipped cream, ice cream or vanilla yogurt (optional)
(One serving is approximately 3/4 cup.)
Notes
Refrigerate leftovers in an airtight container for up to five days. To reheat from refrigerator, microwave for about 1.5 minutes on 70% power.
Prep ahead and freeze for up to three months. From frozen, thaw completely in the refrigerator overnight, and then bake according to recipe instructions.
If you do not have coconut oil, you may use unsalted butter instead.
Optional: Add chopped nuts to the oat mixture before cooking - pecans or walnuts are especially delicious!
