Summer Melon and Prosciutto Salad

Serve this fresh, sweet and savory salad at the height of summer, when melons are in abundance.
As an accompaniment to a charcuterie board for your next gathering, or all by itself as a casual lunch, this salad is nothing short of spectacular. It's so simple to put together, you'll be enjoying this for the rest of the summer!

Serves 4
For the dressing:
4 tbsp. olive oil
2 tbsp. lemon juice
1 tbsp. honey
1 tsp. dijon mustard
salt & pepper

For the salad:
1 cup cantaloupe, cubed or balled
1 cup honeydew melon, cubed or balled
½ cup feta, crumbled
4 oz. prosciutto, torn
4 tbsp. almonds, chopped
4 tbsp. basil, chopped

Instructions:

1.In a bowl, whisk together the dressing ingredients and season to taste with salt and pepper.
2.Place the melon into a large bowl and drizzle with the dressing. Add the feta, prosciutto, almonds and basil, mix gently to combine and serve.
