Super Creamy Vegan Chocolate Mousse
You will not believe this recipe is vegan, the chocolate mousse is so creamy and smooth!
With half of your day's recommended fiber, this gut healthy chocolate mousse is as good for your gut as it is delicious. It comes together in just about 3 minutes, which means you can add it to your meal prep rotation with ease. This has become a staple dessert in our house!
2 cups unsweetened almond milk (or other plant based milk of choice)
1/2 cup chia seeds
1/2 cup unsweetened cocoa powder
4 tablespoons pure maple syrup
pinch of sea salt
Place all ingredients into the container of a high powered blender.
Blend on high for 1 minute or until the mixture is completely smooth, scraping down the sides of the container with a silicone spatula halfway through blending.
Divide into 4 glass dishes and cover.
Refrigerate for at least 2 hours. The flavor gets so much better as it rests!
Serve topped with fresh berries or other cut up fruit, cinnamon, or cocoa nibs.
